These energy balls make for the perfect snack on the go or for when you need a little pick-me-up in a pinch. Quick and easy to make, and still full of flavor.
Here's how we made these delicious cuties:
CHILLED VANILLA COCONUT ENERGY BALLS 🥥 (V, GF)
1 cup almond flour
1/2 cup flax meal
1 tablespoon chia seeds
1 ripe banana, mashed
1/2 cup cashew butter
1/4 cup Creamy Vanilla Bean DELIGHTED BY
1/4 cup dates, chopped
1/4 cup almonds, chopped
1/4 cup coconut shavings
In a medium bowl, combine the first 7 ingredients and mix well. Roll into balls using your fingers (makes about 24!).
Next, roll them through the coconut shavings until they're evenly coated.
Pop'em in the fridge or freezer to chill, and then enjoy!
